Mini Toad in the Hole
Ingredients
- 90g/3oz vegan margarine
- 115g/4oz self-raising flour, sieved
- 1 tsp baking powder
- Pinch pink salt
- 280ml/ ½ pint unsweetened soya/vegan milk
- 55g/2oz whole egg replacer
- 60ml/ 2 fluid ounces water
- Chopped vegan Sosmix sausages
Method
- Preheat the oven to 220°C/425°F/Gas Mark 7.
- Put 1 tsp vegan margarine into each hole of a 9-hole bun tray.
- Mix the flour, baking powder and salt well. Mix the egg replacer into a smooth paste with the water then mix that in a jug with the soya milk.
- Place the Yorkshire pudding tray in the oven for 10 minutes so it gets very hot.
- Add half the liquid containing egg replacer to the dry flour mix. Whisk to a smooth paste then incorporate the rest of the liquid until you have a smooth batter.
- Remove the bun tin from the oven and very quickly spoon the batter into each hole – it should sizzle. Add a couple of chopped sausage to each bun tin. Return to the oven immediately and bake for 15-20 minutes
Where to buy
Sosmix is very hard to find but the online Vegan Store, Alternative Stores are still supplying the original Sosmix in new 500g, 1kg, 5kg & 10kg bags. You can order online for delivery, usually next day within the UK, or they ship worldwide.
We have also found several health food stores selling sausage mixes with the label “sosmix” but its not the original Sosmix so beware of imitations like the Granose or Suma sausage mixes.
